You need to get the HVAC system fault code scanned using VAG group specific diagnostic equipment such as VCDS.

You possibly can but you need to know what is wrong and the system is diagnostically monitored. Private message me your REG number so I can see which of the two systems you have.

You have the system known as "Climatic" where the temperature is controlled by an air blending flap which varies the flow through the constantly circulating heat matrix which is not controlled by a water valve as it was in the past. The air blending flap is operated by a motor known as V68 (even though the parts system gets this wrong and calls it V158 which is for the "Climatronic" system) and these are extremely unreliable as are the attached levers, to the extent the system has been revised several times. The curent part numbers are 2Q0 907 511 E which costs £92.29 and the levers are 1K0 898 002 B at £34.62. To replace these parts you have to remove the glove box and the air vent duct behind it so you can access the motor, to fit all the seven part included in the lever kit requires a lot of dismantling so you just use what is necessary. After installation, the motor MUST be set up using suitable VAG compatible diagnostic equipment so the controller can learn the start and end positions of the flaps travel, failure to do this will strain the system and cause further damage. These parts are common to a huge range of VAG vehicles from 2004 onwards.
